During my recent presentation at the Holistic Health Summit in Bloomington, an attendee asked an intriguing question: "What do you have for breakfast?" This subject provides an excellent opportunity to engage in meaningful discussion, as our daily food choices significantly impact our skin health and overall appearance.
As a result, I put together a list of several breakfast options that I enjoy regularly.
At least twice a week, I have free-range organic eggs served on a slice of sourdough bread, with mashed avocado and generously topped with chopped cilantro. Sometimes I like to switch up cilantro with parsley or dill.
Another favorite option of mine is an omelet or scrambled organic eggs with avocado, homemade organic hot sauce, and greens, also served on a slice of sourdough bread that my husband bakes.

On days when I don't have eggs, I typically prepare smoothies, varying the ingredients based on what's available.
Here are several recipes for you to try, encouraging you to explore new ingredients and flavors to keep your breakfast routine exciting.


Immune-boosting Smoothies
Vika's favorite smoothie
Ingredients:
- 1 cup of roughly chopped arugula
- 2 cups of water
- 1 medium-sized banana
- 1 medium-sized apple
- 1 tablespoon of maca powder
- 1 tablespoon of amla powder
- 1 teaspoon of camu camu powder
- 1 tablespoon of fresh ginger
- Half of an avocado
- 1/2 a teaspoon of stevia
- A handful of ice
Instructions:
1. In a blender, combine all the ingredients. Blend until smooth.
2. If the smoothie is too thick, add more liquid, one tablespoon at a time, until you reach your desired consistency.
Green Garden Immune Booster

Feel free to experiment with different fruits and greens in this smoothie, empowering you to customize your breakfast for better health.
Ingredients:
- 1 cup roughly chopped arugula and baby kale
- 1 ½ cups water, almond milk, or coconut milk
- 1 ½ cups frozen mixed berries (blueberries, raspberries, and strawberries)
- ½ teaspoon freshly grated ginger
- Juice of ½ lemon
Instructions:
1. In a blender, combine the chopped arugula and baby kale with your choice of liquid. Blend until smooth.
2. Add the frozen berries, grated ginger, and lemon juice, then blend again until smooth. If the smoothie is too thick, add more liquid, one tablespoon at a time, until you reach your desired consistency.
Vitamin C blast smoothie

This delicious smoothie blends berries, tropical fruit, and citrus, providing your body with powerful antioxidants and a boost of vitamin C.
Ingredients:
- 1/2 cup fresh pineapple, chopped
- 1/2 cup fresh strawberries, stemmed and diced
- 1/2 orange, peeled and cut into segments
- 1 large carrot, cut into 1/4-inch chunks
- Juice of 1/2 lemon
- 1/2 cup almond milk
- A handful of ice
Instructions:
Combine all the ingredients in a blender and pulse until smooth.
Very Berry Smoothie

Enhance your smoothie routine with ginger and turmeric to warm your body with this tasty berry smoothie.
Ingredients:
- 1 ½ cups frozen mixed berries
- 1 cup water, coconut milk, or almond milk
- 1 teaspoon freshly grated ginger
- ½ teaspoon turmeric
Instructions:
1. Combine all the ingredients in a blender.
2. Blend until smooth.
